The World Famous Albaik - Secret Broast Recipe

Albaik Broast is something which is synonymous to Saudi Arabia. Whether you are a local or an expatriate, if you are ever in Jeddah, you absolutely have to try Albaik Broast. The original Saudi fast food chain has become a sort of modern tradition or custom which every one coming to or going from Jeddah must experience. However if you are in any other part of the world and craving Albaik Broast, below are 2 recipes which you can try for yourself.

Ingredients for the Albaik Broast
  • 1 cup corn flour
  • 2 eggs beaten
  • 1 kg chicken with skin ( pricked with a fork )
  • 1.5 cups self raising flour
Ingredients for the Marinade
  • 2 tbsp. lemon juice
  • 4 tbsp. oil
  • 1 tsp ginger powder
  • 1 tbsp. garlic powder
  • 0.5 tsp cinnamon powder
  • 2 tbsp. Paprika powder
  • 1 tbsp. salt

Method of cooking
  • Mix all ingredients for Marinade and marinate the chicken for around 4 to 6 hours
  • Mix the corn flour and self raising flour in another bowl
  • Dip the marinated chicken into the beaten eggs and then coat with the flour mixture. Complete with all pieces of chicken and let it rest for a couple of minutes and then repeat this step.
  • Deep fry the chicken on low flame till the chicken is of golden color
  • Serve with any dips of your choice.
Chef Zakir Qureshi Albaik recipe
  • 1 whole chicken with the skin
  • 2 eggs
  • 2 lemons
  • 2 cups plain flour
  • 1 cup corn flour
  • 0.5 tsp red food color
  • 1 tbsp ginger past
  • 2 tbsp garlic paste
  • 0.5 tsp cinnamon powder
  • 4 tbsp Olive oil
  • 4 tbsp Red Chilli powder
  • Cooking Oil to fry
  • Salt to taste
  • Cut chicken into 8 pieces, make sure skin remains intact
  • Mix the cinnamon powder, lemon juice, chilli powder, and olive oil, salt and fill the mixture into a syringe
  • Marinate the pieces of chicken with salt, ginger paste and garlic paste
  • Mix plain flour and corn flour in a bowl
  • Beat the eggs into separate bowl and keep aside
  • Dip the chicken into eggs then coat with mixed flour. Rest for a few minutes and repeat this process
  • Use the syringe to fill the pieces of chicken with the mixture
  • Fry for around 10 – 15 minutes in a covered pan.
  • Your Albaik chicken is ready, at Home.
